Ten Foot Tempranillo
With an ideal climate for maturing red grapes, tempranillo, sourced from Depiazzi’s Vineyard, located at the entrance to Ferguson Valley, Western Australia, is La Kooki Wines first red release. We wanted to make an eminently drinkable wine, similar in style to the Spanish Joven and Crianza wines produced in Rioja and this young grafted Tempranillo ticked all the right boxes. Handpicked on 7th March 2018 the grapes were destemmed to three open fermenters; two were inoculated with yeast, while the third underwent a wild fermentation adding complexity. La Kooki is a family affair so all five of us helped to plunge and gently massage the ferments daily with our feet giving it the nickname ‘Ten Foot Temp’, which stuck. After six days fermenting on skins at about 26 °C the batches were gently pressed to tank to complete primary and malolactic fermentations. After fermentation sulphur dioxide was added and the batches were racked to five seasoned French barrique barrels for maturation. Apart from a brief outing via a quick splash rack in August, to get a little oxygen into the wine, the Tempranillo quietly matured until December, when the barrels were blended for bottling. The 2018 Ten Foot Tempranillo was filtered and bottled in January 2019.
