“Spunk” is an archaic Scottish word for a tinderstick, the idea being that it’s a wine to get the party started. The label design is a celebration of the classic Gill Sans font.
Great Southern riesling is key to the style, with pure citrus line from the natural acidity; the shiraz brings red berries, spice and bright ruby colour. Curiously, the whole ensemble tastes a bit like a more alcoholic Cantillon Rosé de Gambrinus.
Riesling is 65% of the blend, from four barriques (two from Mount Barker and two from Frankland River), the balance two barriques of Mount Barker shiraz, saignée after 3 days on skins. No adds, fining or filtration and the whole blend is fermented wild in old oak. In spring, after 6 months in bottle on lees, I hand riddle and disgorge it in the carport; a lot of extra work but gives a better result, letting the wine breathe and giving clarity to the fruit expression.

Tasting
Have a glass at the ready, as the wine may gently froth out upon opening. Bright, lifted aromas, with all the freshness of early season cherries and wildflowers; almost like it’s channelling a Belgian Kriek with a subtle citrus/herbal twist in there as well. The palate is refreshing and textural, with line and length provided by the riesling. A few grams of residual sugar sit in balance with the skins- derived phenolics and crisp acidity.
