Pinot noir, from the heart of Wilyabrup, was handpicked on 28th February. Whole bunch pressed, six barrels where wild fermented between 16-20 °C. SO2 was added post-ferment, preventing malolactic fermentation; creamy chardonnay lees was used to top-out barrels, which were then lees stirred every 3-4 weeks until July. The wine was heat and cold stabilised prior to filtration for bottling on 8th August 2019.
