The grapes were crushed, chilled and gently pressed to retain the bright fruit flavours. The juices were then fermented separately in tank at cool temperatures to enhance the varietal characteristics of the wine. The wine was briefly matured on lees to build texture and complexity before final blending prior to packaging.
The nose displays intense tropical fruit aromas of papaya, passionfruit, guava, cirtrus and pineapple. The palate is bright and juicy with fresh pineapple, passionfruit and guava flavours combining with loads of citrus which provides length to the palate. The Houghton Sauvignon Blanc Semillon shows all the hall marks of this classic Western Australian blend.
