Zinfandel a distinctive style of wine very popular in California. This wine has a cult following and sells out very quickly. With only 1 hectare grown on the Churchview Estate the volume produced is very limited. The Zinfandel is hand picked late into the riping season where the grapes are semi sun dried. The fruit is then cold soaked for 4 days at 5 degrees with 5% stalk inclusion and then gently pressed, where the resulting juice is sweet, colourful and packed with intense fruit characters. Malolactic fermentation softens the acids before maturation for 24 months in new and used French and American Oak barrels and Hogs Heads. The resulting wine is coarse filtered but no fining agents are used.
