The day after the harvest, the chilled fruit is hand loaded into a press and the juice is transferred directly into new and used French Oak barriques. The barriques are hand loaded into a refrigerated area where spontaneous wild fermentation is encouraged, followed by 12 months of barrel maturation. During this time, the wine was continuously stirred and topped until barrel selection and bottling. The finished barrel selection was 40% new oak, 60% second fill.
Colour : A brilliant light straw
Aroma : Intensely aromatic with freshly squeezed lemon and lime overlaying freshly baked turron. This aroma is complexed with some toasty notes and almond meal.
Flavour : A flavoursome Chardonnay. The palate is fresh with lemon and lime leading the way. This wine has many layers of flavour underlying the bright fruits – the savoury almond meal adds definition and the fresh citrus acidity keeps it all nice and fresh. This wine is all about line and length. A long finish of toasty butterscotch is complimented with some great texture.
