Grapes are picked as cold as possible and gently crushed. Fermentation is carried out in small temperature controlled stainless steel open fermenters.
Maceration lasts for 8 to 10 days. This is followed by malo-lactic fermentation and once completed, by oak maturation in French oak classic barriques.
colour: Dark ruby red with hints of violet.
nose: Lifted character of blackberry with fresh strawberries. Full fruit flavors with a hint of liquorices and mocha.
palate: Fresh strawberry and raspberry predominate.
Liquorices flavours and well balanced tannins linger across the mid and back palate.
Oak adds a compliment of length to the wine, which leaves the palate clean and fresh.
The blend of Sangiovese and Merlot is what in Tuscany is known as the “Tuscan Blend”.
This is an excellent accompaniment to pork, venison and lamb.
To fully enjoy the smoothness and flavors, let this wine breathe for at least 30 minutes before drinking—better if decanter is used.
